Steamed Mussels, Antonio y Marta

Amount  Measure       Ingredient
--------     ------------        --------------------------------
  12        pounds         mussels, whole
   1         cup              garlic, sliced
   1         cup              olive oil
   1                            chili, dried
   1                            bay leaf
   1         cup              oloerso sherry
                                 paprika

Allow the mussels to rinse in 4-6 times their volume of salt (sea) water. Change daily to rid mussels of sand.

Cook garlic in heated oilive oil until browned.  Add chile and bay leaf.

Add mussels.  Add sherry.  Do not add water.  Steam covered for five minutes or until mussels are open. 

Drain and sprinkle with paprika.  Serve immediately.
